Mini date and ginger loaves

                                     

 Ingredients

  • 1 cup of chai tea
  • 1 cup of pitted dates
  • 1 cup almond meal
  • ¼ cup buckwheat flour
  • ¼  melted coconut oil
  • 1 tsp fresh ginger grated using zester.
  • 2 tsp of Botanisrty active corals blend
  • ¼ cup coconut sugar
  • ½ cup pecans  
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt

Method:

Pre heat your oven to 150 degrees.

Brew one cup of your favourite chai tea then pour over the dates and add baking soda, set aside to soak for at least an hour. Soaking the dates in the tea really gives it that extra flavour. 

In a large bowl combine almond meal, buckwheat flour, baking powder, salt, and active corals, stirring well. In a separate bowl, mix melted coconut oil, coconut sugar, and ginger.

Combine date and coconut oil mixtures stir well. Create a well in the center of the flour mixture and fold the date mixture through.

Spread the well combined mixture through your loaf tins, sprinkle roughly chopped pecans over each loaf, baking on 150 degrees for 40 to 45 minutes. (check them around 35 minutes, poke a skewer into the middle of one of your loaves if the skewer comes out clean they are ready!) 

This is a beautiful recipe that i created with my mum! A delicious afternoon treat that is full of nourishing ingredients.
