Minty choc bars
- 1 cup walnuts
- 3/4 cup pitted dates
- 2 tbsp @botanistryblends GLOWING GREENS
- 2 tbsp melted coconut oil
Place all they ingredients in a food processor and blend until it forms a crumb like consistency, press into a lined loaf tin. Pop in the freezer and move onto the filling.
Creamy mint filling 🥥
- 1 cup soaked cashews (soak for minimum 4 hours)
- 1/2 cup coconut cream
- 1/4 cup melted coconut oil
- 2 tbsp cold water
- 1 tsp Peppermint essential oil or peppermint extract
- 2 tbsp pure maple syrup
It is important that you have a high speed blender for this step so you reach a smooth creamy consistency! Blend all of the ingredients on high speed for 1 minute scrapping down the sides of blender as you go.
Pour over the base of the slice and pop back in the freezer allowing to set for at least 2 hours. Chocolate to top!!
For this slice we have just melted 1/2 cup of high quality dark chocolate. Just for the extra crunch we did a sprinkle of @nothing_naughty
Hot tip - run your knife under hot water before slicing!!
